We cure locally sourced belly pork in our own Taste of the Lakes recipe of herbs and spices – Garlic, Black Pepper, Juniper Berries, Nutmeg, Thyme and Bay Leaf. Then we gently smoke the pancetta over oak chippings for a full even flavour. Your Pancetta Block comes in a 500g sealed pack ready to prepare for your culinary needs. You could chop the pancetta into cubes and add to soups or pasta for added depth of flavour, or try slicing it into wafer thin pieces to fry and make the core of an incredible salad.
